Creating authentic Neapolitan pizza dough is a true art form. It begins with high-protein Italian Tipo 00 flour, pure spring water, natural sea salt, and a pinch of active yeast. But the true magic lies in the fermentation process.
At Pizza Mania, we allow our dough to ferment slowly at cool temperatures for 48 hours. This extended fermentation breaks down complex starches, resulting in a light, digestible dough with incredible flavor complexity and airy crust bubbles.
When the dough enters our wood-fired brick oven at 450°C (850°F), it bakes in just 90 seconds. This high-heat flash baking creates the signature leopard spots on the crust while keeping the center soft, tender, and moist.
Layered with San Marzano tomato sauce, fresh buffalo mozzarella, and aromatic basil, each bite is a celebration of culinary tradition.
